The cold half of the year, warmed and poured. Haskap and mulling spices: star anise, cinnamon, clove, allspice and black peppercorn, with orange zest and fresh juice.

We finish it with apple cider vinegar for acidity and our own Calder Chai bitters to round it out. Structured, not sweet.

750 mL, six to eight pours. Zero proof. Warm it gently on the stove, or pour it cold over ice.
